Empowering the next generation of culinary leaders! The CHSWF Culinary Scholars Program impacts 1,000+ students across 9 schools, offering 500+ hours of hands-on training, mentorship, and paid externships.

The 2025 Charleston Wine + Food Festival, running from March 5–9, showcases not only the region’s rich culinary heritage but also its commitment to fostering future culinary talent. This year’s festival highlights the participation of culinary scholars, whose involvement underscores the event’s focus on education and workforce development in the food and hospitality industry.

Culinary Scholars at the Festival

The Charleston Wine + Food Festival has long been a platform for nurturing young talent. Through initiatives like the Culinary High School Scholars Program, students from Charleston County School District and beyond gain hands-on experience in the culinary field. This program combines classroom learning with real-world training, offering mentorship and paid externships under the guidance of top chefs. Over 1,000 students have benefited from this initiative, which prepares them for careers in the industry while earning certifications like ProStart.

Additionally, partnerships with institutions like the College of Charleston and Culinary Institute of Charleston provide college students with opportunities to participate in internships and fellowships. These roles span event planning, logistics, marketing, and culinary support, ensuring students gain comprehensive industry exposure.


Scholarships and Career Development

The festival’s commitment to education extends to financial support through scholarships. The Charleston Wine + Food Excellence Scholarship is awarded to College of Charleston students pursuing degrees in Hospitality and Tourism Management. This initiative ensures that aspiring professionals receive both academic and practical support as they prepare for careers in the Lowcountry’s thriving culinary scene.

Signature Events Featuring Culinary Talent

Culinary scholars play an active role in several signature events during the festival:

• Culinary Village (March 7): A cornerstone event featuring chef demonstrations, tastings of Lowcountry dishes, and artisan markets. Scholars often assist chefs and engage with attendees, gaining invaluable experience.

• One Night in NOLA (March 7): This event blends Creole and Gullah cuisines, offering scholars a chance to explore cultural fusion through food preparation and presentation.

• Community Impact Luncheon (January 28): Though held earlier in the year, this luncheon celebrates individuals like Gena Berry, Culinary Director for Charleston Wine + Food, who mentors scholars and fosters their growth through programs like Taste of Derby.

Broader Impact on the Culinary Community

The festival’s broader mission includes addressing workforce challenges such as staffing shortages by creating sustainable career pathways. Programs like those offered by One80 Place provide paid externships for individuals transitioning out of homelessness, further enriching Charleston’s culinary workforce. 

Proceeds from events also fund initiatives like the Culinary + Hospitality Investment Fund, which supports workforce training and mentorship programs.


Sustainability and Innovation

In addition to fostering talent, the festival promotes sustainable food practices. 

Culinary scholars are exposed to regenerative farming techniques, sustainable oyster farming, and other eco-friendly innovations featured during festival programming. These experiences not only enhance their technical skills but also instill a sense of environmental responsibility.

Close your eyes for a moment; feel yourself sitting at a quiet outdoor café adjacent to the Museo dell’Opera in Firenze, Italia with the hint of classical music echoing off the historic churches as you indulge lobster gnocchi over a class of Chianti.

Can you picture that?

Laura, a rustic Italian restaurant experience located at 101 North Main Street, Summerville, SC, is the creative vision and family tradition of Chef Nico Romo.  For those that do not know Chef Nico, the visionary behind Nico, Bistronomy by Nico, and Kersey House, you are in for a memorable dining experience that will test the limits of dining excellence in the Lowcountry. With recipes and ingredients born from the town of Arpino, between Naples and Rome, Chef Nico has curated a menu that will invite the palate to an evening of Italian bliss.

From the first indulgent smells to the laughter and love of a deeply rooted Italian family, Laura welcomes you in like family.  It feels like home when you dine here.  Safe, warm, and delicious.  

We know each of you will have a different experience, but we’d like to tell you about ours and hope it paints a picture that will help you to choose Laura for your next dinner reservation. 

Our group was born out of new friendships emerging from shared experiences and thus the night was filled with storytelling and promise.  In a way, it made the dinner a little more special.  Every course became a member of our friendship circle in a family dining atmosphere.

Our dining journey

We started with the delightful burrata dish, featuring locally sourced tomatoes, fresh basil pesto, and a tangy balsamic reduction to tie all the flavors together. This was served alongside warm, fluffy focaccia, not to be confused with our separate order of focaccia for the table. 

Laura’s daily offering of focaccia was served with an herb-forward butter that should be packaged and sold- it was so flavorful, fresh, and lightly whipped; that perfect spreadable texture. 

Fungo Pizza

Next up was the Laura Salad, the final shareable course for the table. Imagine a colorful mix of greens, peppers, tomatoes, and radishes, all tossed together for that perfect crunch. But it didn’t stop there. Slices of savory salami and mortadella, along with mozzarella and tangy gorgonzola really elevated this dish, with toasty pecans adding a subtle crunch. 

At this point we all went our separate ways for our second courses, and we each enjoyed the following: 

Fungo Pizza: Featuring a Neapolitan-style crust topped with an earthy mushroom cream base, prosciutto, pecorino and provolone cheeses, and a generous handful of peppery arugula.

Pappardelle Fungo: Pappardelle pasta tossed with tender braised mushrooms, savory pancetta, spicy nduja (sausage), and rich parmesan. A sprinkling of herbed breadcrumbs adds a nice little crunch to every bite. This dish is slightly spicy, but if you want to take it a step further, ask for their house made chili oil. 

Bucatini Carbonara: Al dente bucatini pasta tossed with crispy pancetta, tangy pecorino, and rich parmesan. As if this isn’t decadent enough, a perfectly cooked egg is delicately mixed in to create a creamy coating for the pasta. 

Lasagna a la “Laura”: Served in its own personal-sized casserole dish. This classic dish features layers of rich Bolognese sauce that tastes like homemade, plus gooey mozzarella, and sausage. Parmesan cheese on top is chef’s kiss!

Good Southern fried food is so often taken for granted in the South that it lacks the well deserved recognition it has earned.

It is the smell, the taste, the lingering warmth in our stomach that makes us yearn for this delicacy.  Fried chicken is a way of life and we would never give it up.  As a tribute to the beautiful gift of fried chicken, we have written an Ode.  We hope you enjoy this poetic tribute.

I love your thighs
I love your wings

I wanna dip you in oil
And all of those pretty things

I want your white meat and your dark too
I wanna peel off your skin and bite into you

You are the one that whets my appetite
As you crunch down my palate tonight

I wanna swallow you whole, bones and all
With a side of fries, dressed up in slaw

I can smell you from a mile away
Tasting your southern deliciousness is all I can say

The South Carolina Chef Ambassador program was established in 2015 to recognize chefs who best represent the state’s culinary culture. As well, the chef’s professional creativity and personal style has contributed to an ongoing effort to promote the state’s authentic culinary experiences and encourage the incorporation of buying local into everyday dining.

Chef Marcus started his culinary expedition at a young age in his hometown of New Bedford, Massachusetts, a city known for commercial fishing and scalloping industries. His love of cooking began early, when he expressed a curiosity for cooking that his mother helped him to develop. He learned the fulfilling art of cooking for others and sharing his skills with friends and family. 

Marcus graduated from the Le Cordon Bleu Boston Campus in 2011 and continued his pursuit of knowledge and experience. While working in Greenwood, SC he was mentored by a former Charleston Executive Chef, and his passion for food grew, as well as his curiosity for the city of Charleston. After a solid year as Sous Chef at 82 Queen, Chef Marcus embarked on a new journey of his own. His goal of being an Executive Chef was achieved at 39 Rue de Jean, and his style is a perfect match of traditional and contemporary. 

Chef Marcus pairs exquisite technique with innovation to bring a creative twist to the classic dishes which Rue de Jean has been known for over 20 years of Charleston dining.

An hour and a half south of Charleston, the small South Carolina town of Beaufort is the perfect destination to visit with your family 

Recently, my family and I were able to take a two-night getaway to The Emerald in Beaufort, SC. Whenever we plan to travel with our two-year-old son, I always get a bit of ‘motherly anxiety’ regarding our plans, the logistics of getting around, and most importantly, keeping my toddler happy and entertained. Our stay at The Emerald not only surpassed our expectations but secured a place on our list of easy getaways to make a repeat visit to. Below I will explain more about why this stunning town ranked so highly on our list for a family-friendly, mini-vacation spot:

#5 A Charming Waterfront Town

Beaufort, SC is one of the most picturesque small towns that we’ve ever visited. Everywhere you look you’re greeted with beautiful harbor views, Spanish moss, and the famously recognizable lowcountry marshes. Between dining on the waterfront, strolling through the Beaufort Tree Walk, or chatting on the swings in Waterfront Park, everywhere you look is “picture perfect”.

#4 1.5 Hours From Downtown Charleston

As many parents can attest, it’s not always my idea of ‘fun’ to travel with a toddler. From packing up half of your house to entertaining your children during the trip, logistically a long trip can be a nightmare. Thankfully, Beaufort, SC is only an easy hour-and-a-half trip from the Charleston peninsula. Not only is it a shorter drive, but the trip also takes you through country roads and along scenic lowcountry marshes so you don’t have to worry about massive traffic or unexpected delays either. 

#3 A Variety Of History And Activities

Beaufort, SC is home to an unbelievable amount of preserved history due to the civil war not being fought within the town. In addition, it is also home to a lot of Gullah Geechee culture. With such rich and diverse history within the town, you will have so much to see and learn about during your visit. 

For the kids, there is A LOT of beautifully landscaped outdoor green space to run around and play. The renovated waterfront park playground is incredible and even has designated sections for toddlers and older kids to play safely. When you visit Bay Street, you will also be greeted with a variety of small boutiques with treasures from local artists, culinary gifts, clothing, and toys which makes the shopping experience fun for everyone. Make sure to swing by Bay Street Jewelers to check out the beautiful Beaufort Destination Collection of jewelry that honors this special town.

#2 The Food

I can’t begin to rave about Old Bull Tavern enough. Two words: Butterscotch Pudding! As a newly designated lover of butterscotch, I would make the trip down to Beaufort just to eat that pudding! 

Simply put, the food in Beaufort was awesome, especially for seafood lovers such as myself. The shrimping industry is booming within the town which is reflected on the local restaurants’ menus. In fact, the shrimp salad at Plums also secured a spot on my list of favorite bites and sips during our time there. In addition, you can’t go wrong with trying the tomato pie at Lowcountry Produce, the chocolate macadamia caramel from The Chocolate Tree, and the iced coffee from Scout Southern Market (head to the back of the store)!

#1 The People

If I had to guess, I would say that the phrase ‘southern hospitality’ originated in Beaufort. The Beaufort locals that we had the pleasure of meeting absolutely made this trip. Anne and the amazing staff at The Emerald went above and beyond to welcome us with a special treat and answer all of our questions. Megan from Visit Beaufort, Emma from Emma’s Earth Shop, and Wayne, the ultimate tour guide, made sure that we got a full lesson on what makes Beaufort so special. From the local boutique employees, to the restaurant managers and waitstaff, everyone that we met went out of their way to make us feel welcome, special, and even doted upon (in my son’s case). 

On our last night in Beaufort, we visited Old Bull Tavern, where we met the incredible team of Oscar, Sydney, and our server, Derek. On our way out, Derek remembered that my son was turning two and pulled out his wallet to gift my son his first two-dollar bill for his birthday. This act of kindness was so incredibly touching and memorable. People like Derek who welcome families into their establishments with open arms are the number one reason why Beaufort is the ultimate getaway from Charleston!

Andolini’s Pizza West Ashley closes after 30 years in business

On December 31, 2022, Charleston-area pizza restaurant Andolini’s West Ashley closed its doors after three decades in business.

A message from the Andolini’s Facebook read,

“After 30 years, we are sorry to announce that Andolini’s Pizza West Ashley has closed it’s doors permanently, as of December 31, 2022. To all our loyal patrons and staff who were part of the journey… thank you all from the bottom of all our hearts! We will miss you. Have a safe, happy, and most importantly, a Healthy New Year!!Yours in Pizza” 

The official announcement came on the restaurant’s Facebook page on Saturday afternoon, nearly a month after a post celebrating the restaurant’s 30th anniversary.

As a fan of the Lowcountry traditions and Andolini’s, we will miss you.

Hugh-Baby’s Charleston will mark Martin’s second Lowcountry restaurant, following the 2019 opening of Martin’s Bar-B-Que Joint on James Island.

Hugh-Baby’s BBQ & Burger Shop, restaurateur Pat Martin’s Nashville-born burger and barbecue spot, is coming to the Charleston area in January 2023.

That’s according to a news release from Hugh-Baby’s, which will make its home in West Ashley at 1028 Saint Andrews Blvd. The vision of restaurateur and founder Pat Martin, Hugh-Baby’s is a tribute to the small-town eateries Martin frequented in his childhood, the release stated.
