Chicken and Veggie Skillet RECIPE COURTESY OF KARDEA BROWN

Ingredients
Chicken and Veggies: 4 bone-in, skin-on chicken thighs
1 tablespoon Miss Brown’s House Seasoning, recipe follows
2 tablespoons Dijon mustard
2 small beets (golden or red), cut into 1/2-inch chunks
1/2 bunch rainbow carrots, peeled and cut into 1-inch chunks
1/2 cup 1-inch parsnip chunks
1/2 red onion, sliced
2 tablespoons olive oil
2 sprigs fresh rosemary
2 sprigs fresh sage
2 sprigs fresh thyme
1 sprig fresh tarragon
Butter Sauce:
6 tablespoons unsalted butter
2 tablespoons dry sherry, optional
2 tablespoons minced fresh parsley
1 tablespoon fresh lemon juice
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
Miss Brown’s House Seasoning:
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper
Directions For the chicken and veggies:
Preheat the oven to 400 degrees F. Sprinkle the chicken with half of the House Seasoning and brush both sides with the Dijon mustard. Drizzle the beets, carrots, parsnips and onion with 1 tablespoon of the olive oil and sprinkle with the remaining 1/2 tablespoon House Seasoning. Set aside. Heat the remaining tablespoon olive oil in a large cast-iron skillet over medium-high heat. Cook the chicken until browned, about 3 minutes. Flip and cook until browned on the other side, 4 to 5 minutes more.
Remove the chicken to a plate. Add the beets, carrots, parsnips and onions to the skillet and cook until browned, 4 to 5 minutes. Add the rosemary, sage, thyme and tarragon and nestle the chicken into the vegetables. Transfer the skillet to the bottom rack of the oven.
Bake until the juices from the chicken run clear and the vegetables are tender, about 40 minutes. For the butter sauce: Melt the butter in a small saucepan over medium heat. Add the sherry, if using, along with the parsley, lemon juice and garlic. Bring the mixture to a simmer and season with salt and pepper.
Remove the skillet from the oven and pour the sauce over the chicken and vegetables.
Miss Brown’s House Seasoning:
Yield: 5 tablespoons
Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

Following the unveiling, the youngsters in attendance will attend a tennis clinic before having a Q&A with Madison. All media are invited to the Courts Reveal on April 3, 2023 from 4:00 p.m. to 5:00 p.m. EDT at the JV Morris Tennis Center at 103 North Blvd, North Charleston, SC 29405.
Last September, 2019 Charleston Open winner Madison Keys and her foundation, Kindness Wins, held a social media fundraiser on their annual Kindness Wins Day to raise money for community courts in need. With donations from the Credit One Charleston Open, WTA Charities, her tennis peers and fans around the world, Madison decided she wanted to give funds back to the community of Charleston, a city dear to her heart.
This initial project is being conducted in partnership with USTA South Carolina, which regularly uses the four courts at the JV Morris Tennis Center to provide tennis clinics to underserved youth in the North Charleston area. The city recently renovated two of the four courts and will unveil the Kindness Wins Courts to continue the mission of getting more youth in the community interested in tennis.

Asheville, NC – For years, Asheville’s Brother Wolf Animal Rescue has proudly worked across county lines helping thousands of homeless animals within the Western North Carolina region. Today, the animal rescue organization steps onto the international stage by welcoming dogs who have been rescued from the horrors of a South Korean dog meat farm.
Since 2015, members of Humane Society International (HSI) have been traveling to South Korea in the hopes of ending the consumption of dog meat by providing local farmers with practical tools to leave the industry. The dogs in Brother Wolf’s care come from HSI’s 18th dog farm closure made possible through their Models for Change program.
“We’re honored to partner with Humane Society International on this rescue,” said Leah Craig Fieser, Executive Director of Brother Wolf Animal Rescue. “These dogs have come from the worst kind of living conditions. We are so thankful that they are now safe with us and will get to experience the life every dog deserves – a life of care, kindness and joy.”
Despite the decreasing popularity of dog meat throughout South Korea, there are still about one million dogs confined in farms across the country who are experiencing daily neglect. Brother Wolf is asking for donations to support the medical treatment and daily care these dogs will require to recover and heal prior to adoption. As part of Brother Wolf’s Spring Match Challenge, a generous community member is matching all donations through the end of April up to $50,000.
